A batch of warm, cozy soup can be a great way to use up some of that summer garden zucchini. Many recipes are blended, making it a great way to use up frozen summer zucchini in the cold, winter months.

Broccoli Cheddar Zucchini Soup is my personal favorite. Pair a hearty portion with some crusty bread for a complete meal, or a small soup with a side salad for a lighter lunch.
