Zucchini pizza bites are perfect for snacking and serving as an appetizer at your next party. Thick sliced zucchini is topped with marinara, cheese, and pepperoni and broiled to perfection in the oven.

Ingredients
2largezucchini
¼teaspoonsalt
⅛teaspoonpepper
½cupmarinara sauce
1cupshredded mozzarella cheese
½cupmini pepperoni
Instructions
Move oven rack to top third of the oven, ideally within about 6 inches of the broiler.
Line a baking sheet with foil and set aside.
Slice zucchini into ½ inch thick slices and pat dry with a paper towel. Arrange zucchini slices in a single layer on prepared baking sheet. Season tops with salt and pepper.
Top zucchini slices with marinara sauce, cheese, and pepperoni slices (or your favorite pizza toppings).
Turn on broiler to preheat for a minute.
Broil zucchini for 4-5 minutes, or until cheese is melted, golden brown, and bubbly. Keep an eye on your broiling food and do not walk away during this time.
Leftovers: Zucchini pizza bites are best served fresh but leftovers will keep for about 2 days in the refrigerator.
Soggy zucchini: To prevent soggy zucchini, slice your zucchini into thick, ½ inch slices and take care not to overcook. Overcooked zucchini will turn out soggy.
